- 1 pound turkey gizzards
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 celery stalks, diced
- 3 tablespoons olive oil
- 4 cups chicken broth
- Salt and pepper to taste
- Fresh herbs (parsley or thyme) for garnish
Instructions
- Start by thoroughly rinsing the turkey gizzards under cold water. Remove any excess fat and connective tissue.
- In a large pot, heat the olive oil over medium heat. Add the diced onion, minced garlic, and diced celery. Sauté for 5-7 minutes until tender.
- Add the cleaned turkey gizzards and chicken broth to the pot. Bring to a boil, then reduce the heat and simmer for 1-1.5 hours until tender.
- Remove the gizzards from the broth, cool slightly, and cut into bite-sized pieces.
- Add the cut gizzards back into the pot with the sautéed vegetables and broth. Simmer for another 20 minutes. Season with salt and pepper to taste.
Notes
- Leftover turkey gizzards can be stored in an airtight container in the refrigerator for up to 3 days.
- For longer storage, freeze in a freezer-safe container for up to 3 months.
- Serve over rice or alongside creamy mashed potatoes for a hearty meal.
