  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 celery stalks, diced
  • 3 tablespoons olive oil
  • 4 cups chicken broth

Instructions

  1. Start by thoroughly rinsing the turkey gizzards under cold water. Remove any excess fat and connective tissue.
  2. In a large pot, heat the olive oil over medium heat. Add the diced onion, minced garlic, and diced celery. Sauté for 5-7 minutes until tender.
  3. Add the cleaned turkey gizzards and chicken broth to the pot. Bring to a boil, then reduce the heat and simmer for 1-1.5 hours until tender.
  4. Remove the gizzards from the broth, cool slightly, and cut into bite-sized pieces.
  5. Add the cut gizzards back into the pot with the sautéed vegetables and broth. Simmer for another 20 minutes. Season with salt and pepper to taste.
