    Very unique and great recipe for bread Josephine. In Kerala part of South India we do something similar to what you did initially , we cook small amount of rice flour to get a thick consistency to make a fermented rice crepe or pancake called ''Palappam'.

    Looks great and last longer then 5 Days, I did buy recently a bread from a Middle Eastern shop crook didn’t last even 3 Days I didn’t eat a damn slice of it so it turn mouldy disgusting green and end up in rubbish bin.

    Hi Josephine! Thank you for sharing the recipe. However, I have a question. I read in your blog that we can proof the dough overnight or let it rest for 1 hour in room temperature but the video said to do both. I'm a little bit confused here. Can I just proof the dough for 1 hour in room temperature for the first proofing?
