God, just stop writing "No sugar" ffs. I'm so fed up with the stupid clickbaiting all the time. Just write "No conventional sugar" or "no crystal sugar", cause honey is sugar.
Very unique and great recipe for bread Josephine. In Kerala part of South India we do something similar to what you did initially , we cook small amount of rice flour to get a thick consistency to make a fermented rice crepe or pancake called ''Palappam'.
Looks great and last longer then 5 Days, I did buy recently a bread from a Middle Eastern shop crook didn’t last even 3 Days I didn’t eat a damn slice of it so it turn mouldy disgusting green and end up in rubbish bin.

Can I just proof the dough for 1 hour in room temperature for the first proofing?

This isn't wholemeal bread, it only has 60g of wholemeal flour in it.

I made this morning. My fan don't have heat fan oven function. I use normal baked but slightly lower temperature.
