Instructions
- Prepare the Fruits and Vegetables: Peel and chop the fresh pineapple into bite-sized chunks. Wash and slice the cucumbers thinly or into cubes. Chop the mint leaves finely.
- Make the Dressing: Whisk together lime juice, honey, and chili powder if using, in a small bowl to create a sweet and tangy dressing.
- Assemble the Salad: Combine pineapple, cucumber, and mint in a bowl. Pour dressing over and toss gently. Chill for at least 15 minutes.
- Serve Your Salad: Garnish with extra mint or toasted coconut if desired. Serve cold as a side or snack.

- For added flavor, consider adding thinly sliced red onion or toasted coconut flakes as toppings.
- Best stored in an airtight container in the refrigerator for up to 2 days. Add dressing just before serving to prevent sogginess.
