Instructions
- Start by washing the ripe figs thoroughly. Chop them into small pieces to help release their natural juices and ensure a smooth texture in your jam.
- In a medium-sized heavy-bottomed saucepan, combine chopped figs, honey, lemon juice, lemon zest, and a pinch of salt. Stir well to incorporate all ingredients evenly.
- Cook over medium heat, stirring frequently to prevent sticking. Bring the mixture to a gentle simmer. Let it cook for about 20-25 minutes until it thickens to a jam-like consistency. If the mixture becomes too thick, add a splash of water to adjust the texture.
- To check if your jam is ready, place a small spoonful on a chilled plate. If it wrinkles when gently pushed, itβs done. Pour the hot jam into sterilized jars, seal tightly, and allow to cool before refrigerating.
