  • Total Time: 25-30 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 4 salmon fillets (skin-on or skinless)
  • 2 ripe peaches, sliced
  • 1/4 cup bourbon
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Juice of half a lemon
  • Salt and pepper to taste
  • Fresh herbs (such as thyme or basil) for garnish

Instructions

  1. Prepare the Peach Bourbon Glaze: In a small saucepan, combine bourbon, honey, soy sauce, and minced garlic. Bring to a simmer over medium heat, stirring occasionally. Reduce heat and cook until slightly thickened, about 5-7 minutes. Stir in lemon juice and set aside.
  2. Season the Salmon: Pat salmon fillets dry and season generously with salt and pepper. Drizzle with olive oil and gently rub to coat evenly.
  3. Roast with Peach Glaze: Preheat oven to 400ยฐF (200ยฐC). Place salmon on a baking sheet lined with parchment paper or lightly greased dish. Arrange sliced peaches around the salmon. Brush the fillets generously with the prepared bourbon peach glaze.
  4. Cook to Perfection: Roast for 12-15 minutes or until salmon flakes easily. During last few minutes, baste with additional glaze. Garnish with fresh herbs before serving.

Notes

  • Use fresh or frozen peaches; if frozen, thaw and drain before use.
  • Replace bourbon with apple or white grape juice for a non-alcoholic version.
  • Marinate salmon briefly with the glaze for more flavor.
  • Add smoked paprika for a smoky twist.
