- 4 salmon fillets (skin-on or skinless)
- 2 ripe peaches, sliced
- 1/4 cup bourbon
- 2 tablespoons honey or maple syrup
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- Juice of half a lemon
- Salt and pepper to taste
- Fresh herbs (such as thyme or basil) for garnish
Instructions
- Prepare the Peach Bourbon Glaze: In a small saucepan, combine bourbon, honey, soy sauce, and minced garlic. Bring to a simmer over medium heat, stirring occasionally. Reduce heat and cook until slightly thickened, about 5-7 minutes. Stir in lemon juice and set aside.
- Season the Salmon: Pat salmon fillets dry and season generously with salt and pepper. Drizzle with olive oil and gently rub to coat evenly.
- Roast with Peach Glaze: Preheat oven to 400ยฐF (200ยฐC). Place salmon on a baking sheet lined with parchment paper or lightly greased dish. Arrange sliced peaches around the salmon. Brush the fillets generously with the prepared bourbon peach glaze.
- Cook to Perfection: Roast for 12-15 minutes or until salmon flakes easily. During last few minutes, baste with additional glaze. Garnish with fresh herbs before serving.
Notes
- Use fresh or frozen peaches; if frozen, thaw and drain before use.
- Replace bourbon with apple or white grape juice for a non-alcoholic version.
- Marinate salmon briefly with the glaze for more flavor.
- Add smoked paprika for a smoky twist.
