- 4 boneless, skinless chicken breasts
- 3 ripe peaches, sliced

Instructions
- Start by seasoning the chicken breasts with salt, pepper, and a little thyme or basil. Heat 1 tablespoon of olive oil in a skillet over medium-high heat, then add the chicken breasts.
- Cook the chicken for about 6-7 minutes on each side, until golden brown and cooked through. Remove from the skillet and set aside.
- In the same skillet, add another tablespoon of olive oil if needed. Toss in the minced garlic and sliced peaches. Cook for 2-3 minutes until peaches are tender and release their juices.
- Stir in honey or maple syrup, and add a splash of balsamic vinegar if desired. Let simmer for a minute, stirring gently.
- Return the cooked chicken to the skillet, spooning the peach sauce over the top. Cover and cook for an additional 2 minutes to meld flavors. Serve hot.
