Ingredients
- 4 ripe peaches, halved and pitted
- 2 tablespoons honey
- 1 teaspoon vanilla extract
- Optional: Fresh mint leaves for garnish
- Ice cream of choice (vanilla recommended)
- Olive oil or cooking spray for grilling
Instructions
- Start by washing your peaches thoroughly. Cut each peach in half and remove the pits. Handle gently if peaches are very ripe to avoid excessive juice runoff.
- Mix the honey and vanilla extract in a small bowl. Brush this mixture onto the cut sides of the peaches. Let sit for about 10 minutes to absorb flavors.
- Preheat your grill to medium-high heat. Lightly oil the grill grates using a brush or spray to prevent sticking and achieve beautiful grill marks.
- Place the peaches cut side down on the hot grill. Grill for 3-4 minutes until grill marks appear and peaches become slightly tender. Flip and grill for another 2-3 minutes.
- Remove the peaches from the grill and let them cool slightly. Plate the grilled peaches and top each with a scoop of vanilla ice cream. Drizzle with extra honey and garnish with fresh mint for a refreshing touch.
Notes
- Enjoy immediately for the best flavor and texture. Leftovers can be stored separately in an airtight container in the refrigerator for up to 1 day. Reheat gently before serving.
- For added flavor, sprinkle crushed nuts or add a drizzle of balsamic glaze. Incorporate fresh berries for extra freshness.
