Instructions
- Cook rice according to package instructions and set aside.
- In a bowl, toss diced chicken with cornstarch until evenly coated.
- Heat sesame oil in a large skillet over medium heat. Add chicken and cook until browned and cooked through.
- Add garlic and ginger; sauté for 30 seconds.
- Stir in soy sauce and honey, then add pineapple chunks. Cook for 2-3 minutes until heated through and slightly caramelized.
- Serve the chicken and pineapple over rice, garnished with chopped green onions and sesame seeds if desired.
