- 4 medium-sized potatoes (the star of our Super Potato dish!)
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh herbs (like parsley or cilantro) for garnish
Instructions
- Prepare the potatoes by peeling and cutting them into cubes for even cooking.
- Dice the potatoes and place them in a mixing bowl, then add the mixed vegetables.
- In a large skillet over medium heat, add olive oil and sauté chopped onion and minced garlic until fragrant. Add the diced potatoes and cook until they start to brown.
- Stir in the mixed vegetables, paprika, salt, and pepper, and cook until everything is tender. Garnish with fresh herbs before serving.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Freezing the mixture is a great option for up to a month; reheat thoroughly before serving.
