one variation i had at my caifan stall with the potatoes and luncheon meat- was additional cubed deep fried egg tofu, deep fried until crust was formed too and darker than usual. realllly nice
I tried this today and I have a qns. When I started frying the luncheon meat, there are alot of foam bubbles forming on top, unlike yours which is clear oil. May i ask why and will it makes a difference in the cooking?
Maybe we could substitute Chili oil for the Chili sauce and also add some green onions. Better yet, add the green onions to the oil with the garlic. This recipe looks outstanding on so many levels.
