You need to par boil the tomatillo so it isn't bitter. Just chop the jalapeño, you don't need to soften it. I love street corn. I can't wait to try it a a salad.

Everything bagel seasoning would probably taste good on the pigs in a blanket.
I always find it funny that Americans call sausages in pastry pigs in blankets as in the UK pigs in blankets are sausages wrapped in bacon. We would call this version a sausage roll! Funny how the same thing has different names.
