- 4 boneless, skinless chicken breasts
- 3 ripe peaches, sliced
- 2 tbsp olive oil
- 1 small red onion, sliced
- 3 cloves garlic, minced
- 1 tbsp balsamic vinegar
- 1 tsp honey
- 1/2 tsp dried thyme
- Salt and pepper to taste
- Fresh basil or mint for garnish (optional)
Instructions
- Season the chicken breasts with salt, pepper, and dried thyme. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Cook chicken for 6-7 minutes per side until golden and cooked through. Remove and set aside.
- Sautรฉ sliced red onion and minced garlic in the same skillet for 2-3 minutes until fragrant and translucent.
- Add peach slices to the skillet and cook for 2-3 minutes until softened. Stir in balsamic vinegar and honey, simmer for 2 minutes to develop flavor.
- Return the chicken to the skillet, spoon sauce over, cover, and cook for an additional 2 minutes. Garnish with fresh basil or mint.

- Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
- Reheat gently in the microwave or in a skillet over low heat for best results.
