  • 3 ripe peaches, sliced

  • 1 small red onion, sliced
  • 3 cloves garlic, minced
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • 1/2 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt, pepper, and dried thyme. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Cook chicken for 6-7 minutes per side until golden and cooked through. Remove and set aside.
  2. Sautรฉ sliced red onion and minced garlic in the same skillet for 2-3 minutes until fragrant and translucent.
  3. Add peach slices to the skillet and cook for 2-3 minutes until softened. Stir in balsamic vinegar and honey, simmer for 2 minutes to develop flavor.
  4. Return the chicken to the skillet, spoon sauce over, cover, and cook for an additional 2 minutes. Garnish with fresh basil or mint.
