- 4 large carrots, sliced
- 1 can chickpeas, drained and rinsed
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Toss carrots with 1 tablespoon of olive oil and spices.
- Spread carrots on a baking sheet lined with parchment paper.
- Roast for 20 minutes.
- Meanwhile, toss chickpeas with remaining olive oil and spices.
- Add chickpeas to the baking sheet and roast for an additional 15 minutes until crispy.
- Serve hot, garnished with parsley.
Notes
- For extra flavor, add a squeeze of lemon before serving.
- You can substitute sweet potatoes for carrots.
