- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon Cajun seasoning
- 2 tablespoons olive oil
- 1 small onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 cup orzo pasta
- 2 cups chicken broth
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Season chicken with Cajun seasoning, salt, and pepper.
- Heat olive oil in a large skillet over medium heat; cook chicken until browned and cooked through. Remove and set aside.
- In the same skillet, sauté onion, bell pepper, and garlic until tender.
- Add orzo and toast for 1-2 minutes, then pour in chicken broth.
- Bring to a boil, reduce heat, cover, and simmer until orzo is cooked, about 10 minutes.
- Return chicken to skillet, mix well, and cook for another 2-3 minutes. Garnish with parsley before serving.
Notes
- Feel free to add a splash of hot sauce for extra heat.
- Use smoked paprika instead of Cajun seasoning for a smoky flavor.
