    Also take into account that foods back then we’re not mass produce like they are today and full of pesticides and chemicals so the flavoring will be substantially different

    Garlic, you see, is not quite the staple of Italian cuisine.
    Depending on who you speak to, onions are a controversial ingredient too – and don’t even think of ever combining the two in a single dish.
    You need Soffritto ~ The Holy Trinity of Italian Cuisine!
    This holy trinity is also called a “soffritto”, “odori”, or “battuto” and usually include onions, celery, and carrots in a 2:1:1 ratio which in France is called Mirepoix,Sofrito in Spain. In most of Italy this soffritto is gently sauteed in olive oil, although in some northern Italian regions such as Lombardy or Veneto, butter may be used as well.
    What some people don’t realize is that is a meat sauce – not a tomato-based marinara or tomato sauce.
    Pasta is always al dente (very slightly undercooked).
    You finish cooking pasta in its sauce after you have drained it from the boiled water; you never dollop the one on top of the other.
    Ingredients
    • 1 medium onion (4-oz), finely chopped
    • 1 large carrot (4-oz), finely chopped
    • 2 celery stalks (4-oz), finely chopped
    • 20 ounces ground beef (finely ground thin skirt, veal, or beef chuck)
    • 2 cups whole milk
    • 1 cup dry white or red wine2
    • 1 cup of beef broth
    • 1/2 cup (8 tablespoons) of tomato paste
    • Kosher salt and freshly ground pepper

    I hit the like for using the 'more garlic '. I would still add 'more '. I have a few 'vintage' cook books that I love from yard sales, thrift stores , 'favorite recipes ' from school, church, community based groups or sources. Word of the wise: don't add raisins!

    Great video Looks great.. I love to make Italian sauce too with meatloaf mix= pork, veal, beef with fresh garlic & onions and parsley plus I add naval orange 🍊& sugar and cook for 2 or 3 hours. Really good. Thanks

    Other meats can use is > chopped up turkey, pork, chicken, and shrimp. I love them with Spaghetti sauce and Spaghetti noodles Italians, and Mexicans HATE ME ! Cause i mess up there dishes! Into some thing REALLY GOOD ! and there jealous cause they didn't think of it ~ another one can use to replace meatballs is > FRIED ORKA on top its YUMMY
