Instructions
- Trim the brisket, leaving 1/4 inch of fat. Coat with BBQ rub and refrigerate for at least 4 hours.
- Preheat smoker to 250ยฐF. Smoke the brisket for 6-8 hours until it reaches 165-175ยฐF. Wrap in butcher paper and smoke until it hits 203ยฐF.
- Let the brisket rest for 1 hour, then cube the point into 1-inch pieces.
- In a disposable aluminum pan, mix cubed brisket with butter, brown sugar, honey, and BBQ sauce. Return to smoker for 1-2 hours until caramelized and tender.
