Instructions
- Preheat your oven to 350°F (175°C) and mix the dry ingredients in a large bowl.
- If using fresh pumpkin, blend it until smooth; otherwise, use canned pumpkin puree.
- In a separate bowl, mix sugar, oil, and eggs, then combine with the dry ingredients.
- Pour the batter into a greased loaf pan, sprinkle with walnuts or pumpkin seeds if desired, and bake for about 60 minutes.

- Store wrapped in plastic or foil at room temperature for 2-3 days, or refrigerate for up to a week.
- For storage longer than a week, freeze for up to three months and thaw in the fridge before serving.
