No! I eat beef and do NOT eat pork. It's not religious. I just don't want to eat somenthing that is said to be similar to human meat. Your ribs look amazing. I'm okay with the mushrooms. Do you have an alternative to the pancetta?
Great dish will definitely try it. I went to the butcher and asked for a cheap cut of beef short ribs he cut them and prepared them . He then aske for £20 which I thought was a lot. He laughed at me and said no beef is cheap . Just thought I’d share
The first time I did these, I turned it to 170 F, forgetting he was referencing Celsius. So, that almost made me cry after 4 hours and at 11pm. After I got it right, this recipe crushes every time!
He added that white sauce from that green flusk at 1:52. He said it's chicken stock but haven't heard of it. Does it have another name or where can I find it?

Do this in a dutch oven. And it's 350F 170C. You'll need at least 3 hours in a dutch oven.
