Ingredients
Scale
- 1 lb chicken breasts or thighs, cut into bite-sized pieces
- 2 tablespoons olive oil
- 3 tablespoons butter
- 1 small onion, diced
- 3 garlic cloves, minced
- 1 tablespoon garam masala
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- 1 cup tomato sauce or crushed tomatoes
- 1/2 cup heavy cream or coconut cream
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Start by seasoning the chicken pieces with salt, pepper, and a pinch of paprika. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat, then add the chicken. Cook until browned and cooked through, about 6-8 minutes. Remove and set aside.
- In the same skillet, add butter and diced onions. Sauté until onions are translucent, about 3 minutes. Add garlic, garam masala, turmeric, and paprika, cooking for another minute until fragrant.
- Pour in tomato sauce and stir well, scraping up browned bits. Let it simmer for 5 minutes to meld flavors.
- Stir in heavy cream or coconut cream to create a rich sauce. Return the cooked chicken to the skillet, stirring to coat. Cook for an additional 5 minutes until flavors blend and chicken is heated through.
- Garnish with fresh cilantro and serve hot over steamed rice or with warm naan bread. Optional: pair with sides like cheesy chicken broccoli or refreshing tomato cucumber salad.
Notes
- For a milder flavor, reduce the amount of garam masala and paprika.
- Substitute Greek yogurt for heavy cream for a healthier, tangy variation—add off the heat to prevent curdling.
- Leftovers can be stored in an airtight container in the fridge for up to 3 days and reheated gently to prevent sauce separation.
