- 4 large flour tortillas
- 8 ounces of chorizo, casing removed
- 2 cups shredded cheese (Monterey Jack, cheddar, or a blend)
- 1/2 cup diced onion
- Optional toppings: sour cream, salsa, guacamole, cilantro
Instructions
- Cook the chorizo in a large skillet over medium heat for 5-7 minutes until browned. Drain excess grease.
- Lay a tortilla flat and sprinkle half with cheese and half with diced onions.
- Add half of the cooked chorizo over the cheese and onions.
- Fold the tortilla in half and cook in the skillet for 3-4 minutes per side until golden brown and cheese is melted. Repeat with remaining ingredients.
