Ingredients
- 4 boneless, skinless chicken breasts
- 3 tablespoons olive oil
- 2 tablespoons za’atar spice blend
- Juice and zest of 1 large lemon
- 3 garlic cloves, minced
- 1 teaspoon paprika (optional, for extra flavor)
- Salt and freshly ground black pepper to taste
- Fresh parsley for garnish
Instructions
- Start by patting the chicken breasts dry with paper towels. In a small bowl, combine the za’atar, paprika, salt, and pepper. Rub this spice mixture evenly over both sides of the chicken breasts.
- Place the seasoned chicken in a shallow dish or resealable bag. Drizzle with 2 tablespoons of olive oil, lemon juice, and add the minced garlic. Marinate for at least 20 minutes to allow the flavors to meld beautifully.
- Heat a large skillet over medium-high heat. Add the remaining 1 tablespoon of olive oil. Once hot, add the chicken breasts and cook for about 6-8 minutes on each side, or until fully cooked and golden brown. Ensure the internal temperature reaches 165°F (75°C).
- Just before removing the chicken from the skillet, squeeze fresh lemon zest and a little more lemon juice over the top for added brightness. Garnish with chopped fresh parsley for a vibrant presentation.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or a skillet. This dish can be prepared in advance for busy weeknights or meal prepping.
