If that mixer was a Vitamix type of mixer you could have left all of the blended soup in there to heat it up instead of the stove correct? I have a bunch of peppers and I'm going to make this soup today. Kind of getting sick and tired of the old soups and this one looks delicious and sweet.

If I am lazy to make/buy vegetable broth, does using water instead of vegetable broth change the taste drastically? Or maybe can I just soak mushrooms into water and use that instead of vegetable broth?
