- 1 tbsp brown sugar
- 1 tsp ground allspice
- 1 tsp thyme leaves
- 1 scotch bonnet pepper, sliced (optional for heat)
- 2 cups chicken broth
- Salt and pepper to taste
Instructions
- Start by seasoning the chicken pieces with salt, pepper, soy sauce, and a touch of garlic. Let it marinate for at least 30 minutes to enhance the flavor.
- Heat the vegetable oil in a large skillet or Dutch oven over medium-high heat. Add the chicken pieces and sear until golden brown on all sides. Remove and set aside.
- In the same pan, add chopped onions, garlic, and ginger. Sautรฉ until fragrant and translucent, about 3-5 minutes.
- Add ketchup or tomato paste, brown sugar, allspice, thyme, and scotch bonnet pepper to the aromatics. Stir well and cook for another 2 minutes.
- Return the seared chicken to the pan, pour in chicken broth, and bring to a boil. Reduce heat, cover, and simmer for 45 minutes or until the chicken is tender and enriched with bold spices.
- Adjust seasoning with salt and pepper as needed. For a thicker sauce, uncover and simmer for an additional 10 minutes. Serve hot with rice, peas, or your favorite side dish.
