- 2 pounds of potatoes
- 1 cup mayonnaise
- 1 tablespoon mustard
- 1/2 cup diced celery
- 1/2 cup diced red onion
- 1/4 cup diced pickles
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- Wash the potatoes thoroughly and peel if preferred. Slice them into evenly-sized pieces.
- Boil the diced potatoes in a large pot of boiling salted water until fork-tender, about 10-15 minutes.
- Drain the cooked potatoes and let them cool. In a large bowl, combine the potatoes, celery, red onion, and pickles.
- Pour in mayonnaise and mustard over the potato mixture and mix gently.
- Create a dressing by mixing additional mayonnaise, mustard, salt, and pepper in a small bowl. Pour this dressing over the potato mixture and toss gently.
