Instructions
- Preheat your grill or grill pan over medium-high heat. Mix olive oil, smoked paprika, dried oregano, salt, and pepper in a small bowl. Rub this marinade evenly over the chicken breasts. Grill the chicken for about 6-8 minutes per side until fully cooked and juices run clear. Rest the chicken for a few minutes, then slice into thin strips.
- Lay out each tortilla flat on a clean surface. Spread hummus or tzatziki if desired. Divide lettuce, cherry tomatoes, and cucumbers among the tortillas. Add sliced grilled chicken on top, then sprinkle with feta and herbs.
- Carefully roll each tortilla tightly, tucking in the sides to secure the fillings. Use toothpicks or parchment paper if needed for extra security.
- Serve immediately with a side of roasted vegetables or salad. Add lemon or balsamic glaze for extra flavor. Prepare ahead by storing fillings separately and assembling just before eating.
