Quick Cauliflower Rice Stir-fry is a delicious and nutritious meal that’s ready in just minutes! Made with Costco cauliflower rice and a mix of fresh vegetables, it’s perfect for a healthy weeknight dinner or meal prep.

Ingredients

  • 1 bag of costco cauliflower rice
  • 2 tablespoons vegetable oil
  • 1 cup chopped carrots
  • 1 cup bell peppers, diced
  • 1 cup green peas
  • 2 cloves garlic, minced
  • 3 tablespoons soy sauce
  • Salt and pepper to taste
  • Optional: green onions for garnish

Instructions

  1. Prepare your cauliflower rice by chopping fresh cauliflower into florets and processing until rice-sized, or use frozen cauliflower rice.
  2. In a large skillet, heat vegetable oil over medium heat. Add chopped carrots and bell peppers, cooking for 3-4 minutes until tender. Stir in minced garlic and sauté for another minute.
  3. Add the costco cauliflower rice and green peas to the skillet. Stir and cook for 4-5 minutes, allowing the flavors to meld.
  4. Drizzle soy sauce, season with salt and pepper, and stir well. Serve immediately, optionally topped with green onions.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For longer storage, freeze the stir-fry after cooling completely.
