- 1 bag of costco cauliflower rice
- 2 tablespoons vegetable oil
- 1 cup chopped carrots
- 1 cup bell peppers, diced
- 1 cup green peas
- 2 cloves garlic, minced
- 3 tablespoons soy sauce
- Salt and pepper to taste
- Optional: green onions for garnish
Instructions
- Prepare your cauliflower rice by chopping fresh cauliflower into florets and processing until rice-sized, or use frozen cauliflower rice.
- In a large skillet, heat vegetable oil over medium heat. Add chopped carrots and bell peppers, cooking for 3-4 minutes until tender. Stir in minced garlic and sauté for another minute.
- Add the costco cauliflower rice and green peas to the skillet. Stir and cook for 4-5 minutes, allowing the flavors to meld.
- Drizzle soy sauce, season with salt and pepper, and stir well. Serve immediately, optionally topped with green onions.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For longer storage, freeze the stir-fry after cooling completely.
- Reheat on the stovetop or microwave before serving.
