A comforting, easy-to-make soup with tender meatballs, cheesy tortellini, and fresh herbs.

  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 pound ground beef
  • 1 cup grated Parmesan cheese
  • 1 cup Italian bread crumbs
  • 1 large egg
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 6 cups chicken broth
  • 1 package (9 oz) cheese tortellini
  • 1 cup chopped spinach

Instructions

  1. In a large bowl, combine ground beef, Parmesan, bread crumbs, egg, garlic powder, salt, and pepper. Form into small meatballs.
  2. In a large pot, bring chicken broth to a boil, add meatballs, and cook until they rise to the surface, about 10 minutes.
  3. Add tortellini and cook according to package instructions, about 3-5 minutes.
  4. Stir in chopped spinach and cook for an additional 2 minutes.
  5. Garnish with fresh parsley and serve hot.

Notes

  • Ensure not to overcrowd the pot when cooking meatballs for even browning.
