- 1 pound ground beef
- 1 cup grated Parmesan cheese
- 1 cup Italian bread crumbs
- 1 large egg
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 6 cups chicken broth
- 1 package (9 oz) cheese tortellini
- 1 cup chopped spinach
- Fresh parsley for garnish
Instructions
- In a large bowl, combine ground beef, Parmesan, bread crumbs, egg, garlic powder, salt, and pepper. Form into small meatballs.
- In a large pot, bring chicken broth to a boil, add meatballs, and cook until they rise to the surface, about 10 minutes.
- Add tortellini and cook according to package instructions, about 3-5 minutes.
- Stir in chopped spinach and cook for an additional 2 minutes.
- Garnish with fresh parsley and serve hot.
Notes
- Ensure not to overcrowd the pot when cooking meatballs for even browning.
- You can substitute spinach with kale or arugula for variation.
