Instructions
- Begin by cooking the ramen noodles in boiling water according to package instructions. Once cooked, drain and set aside, reserving a small amount of pasta water to adjust consistency if needed.
- In a large skillet, heat the olive oil over medium heat. Add sliced mushrooms, bell peppers, and optional pepperoni or sausage, and sauté until vegetables are tender and slightly caramelized. Season with salt, pepper, and Italian seasoning for extra flavor.
- Add the marinara or pizza sauce to the skillet with vegetables, stirring to combine. Toss in the cooked noodles and stir to coat evenly, adding a splash of reserved pasta water if the mixture seems dry.
