  • 1 lb ground beef
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 2 tsp taco seasoning
  • 8 small tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup fresh salsa
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onions and bell peppers. Sauté for about 4-5 minutes or until tender and slightly caramelized.
  2. Add the ground beef to the skillet, crumbling it as you go. Season with taco seasoning, salt, and pepper. Cook until the beef is browned and cooked through, about 7-10 minutes.
  3. Warm the tortillas and assemble the tacos by layering the cooked beef mixture on each tortilla. Top with shredded lettuce, diced tomatoes, and shredded cheese.
  4. Prepare fresh salsa by combining diced tomatoes, chopped onions, cilantro, lime juice, and a pinch of salt. Serve alongside or on top of the tacos.
