- 1 lb ground beef
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 2 tsp taco seasoning
- 8 small tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup fresh salsa
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onions and bell peppers. Sauté for about 4-5 minutes or until tender and slightly caramelized.
- Add the ground beef to the skillet, crumbling it as you go. Season with taco seasoning, salt, and pepper. Cook until the beef is browned and cooked through, about 7-10 minutes.
- Warm the tortillas and assemble the tacos by layering the cooked beef mixture on each tortilla. Top with shredded lettuce, diced tomatoes, and shredded cheese.
- Prepare fresh salsa by combining diced tomatoes, chopped onions, cilantro, lime juice, and a pinch of salt. Serve alongside or on top of the tacos.
Notes
- Leftover tacos can be stored in an airtight container in the refrigerator for up to 3 days.
- For best flavor, store the meat mixture separate from the tortillas and toppings.
- Reheat the beef mixture in a skillet for the best flavor and use fresh tortillas.
