I wanna try this dish and still haven't and dunno why. I think for myself I'd cook the pasta seperately and add somr of the pasta water to the oil and garlic π and deffs gotta find myself some vegan parmasan for it.
This is what I always order at Vapianos. (Germany) They cook pasta on the side but it is definitely my favorite.. with their prickly pear tea. π€€π€€π€€
Italian here π So…I'd totally recommend to cook the pasta separately from that pan and then once cooked mix it with the oil and garlic. Us Italians never ever cook pasta like that π
The original recipe is aglio, olio e peperoncino, but of course you can avoid chili pepper. But…what in the world is that?? π You are so fun Rose, I like your videos, but as an Italian I must tell you that you should never cook pasta like that, it's a sin! π (just joking, you are free to do whatever you like of course :-))

never mix olive oil with water. it's a sin. also, main ingredient = parsley.

I tried it today with regular thin spaghetti and sunflower avocado oil. I added a little too much water, so I drained it. But it was still yummy!
