Instructions
- In a large mixing bowl, whisk together eggs, vanilla extract, melted butter, and sour cream until smooth.
- In a separate bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt. Gradually add to wet ingredients and mix until just combined.
- Gently fold in the diced peaches, ensuring even distribution without overmixing.
- Pour batter into a greased loaf pan. Optional: sprinkle cinnamon sugar on top for added flavor and crunch.
- Bake in a preheated oven at 350ยฐF (175ยฐC) for 50-60 minutes or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack.
