Instructions
- Start by peeling and chopping fresh peaches, or drain canned peaches if using canned. Set aside.
- In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, salt, and optional spices like cinnamon.
- In a separate bowl, whisk together the melted butter, eggs, vanilla extract, and sour cream or Greek yogurt until smooth.
- Gradually add the wet ingredients into the dry mixture, mixing gently until just combined. Fold in the diced peaches evenly.
- Preheat your oven to 350°F (175°C). Pour the batter into a greased loaf pan.
- Bake for about 50-60 minutes, or until a toothpick inserted in the center comes out clean. Tent with foil after 45 minutes if it browns too quickly.
