- 2 cups grated zucchini (about 2 medium zucchinis)
- 1½ cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- ½ tsp salt
- 2 large eggs
- 1 cup granulated sugar
- ½ cup vegetable oil
- 1 tsp vanilla extract
- ½ cup chopped walnuts (optional)
- ½ cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grate the zucchini and remove excess moisture by squeezing it in a kitchen towel.
- In a large bowl, mix the eggs, sugar, vegetable oil, and vanilla until smooth.
- In another bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt. Gradually fold into the wet mixture, then incorporate the zucchini, walnuts, and chocolate chips if desired.
- Pour the batter into a greased 9×5-inch loaf pan and bake for 60-70 minutes or until a toothpick inserted comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
Notes
- Store the bread in an airtight container at room temperature for up to 3 days.
- For longer storage, wrap it tightly and freeze for up to 3 months.
- Try cream cheese or butter as a spread for an enhanced flavor!
