- 2 lbs beef chuck roast, cut into chunks
- 1 cup red wine
- 2 carrots, sliced
- 2 potatoes, cubed
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 tablespoons tomato paste
- 1 teaspoon thyme
- 2 bay leaves
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup beef broth
Instructions
- Heat olive oil in a skillet and brown the beef chunks on all sides. Transfer to slow cooker.
- In the same skillet, sauté onion and garlic until fragrant, then add to the slow cooker.
- Add carrots, potatoes, tomato paste, thyme, bay leaves, salt, pepper, red wine, and beef broth.
- Cook on low for 8 hours until beef is tender and flavors meld.

- Use high-quality red wine for richer flavor.
- Vegetables can be adjusted to taste.
- Thicken sauce with a cornstarch slurry if desired before serving.
