Instructions
- In a small bowl, whisk together honey, minced garlic, soy sauce, olive oil, smoked paprika, salt, and pepper to make the marinade.
- Place chicken thighs in a large zip-top bag or shallow dish. Pour marinade over the chicken, ensuring all pieces are coated. Marinate in the refrigerator for at least 30 minutes, up to 2 hours.
- Preheat grill to medium-high heat (about 375°F / 190°C).
- Remove chicken from marinade, shaking off excess. Grill chicken for 6-8 minutes per side, until internal temperature reaches 165°F (74°C). Brush with extra marinade during the last few minutes for a glaze.
- Once cooked, let rest for 5 minutes. Garnish with chopped parsley and serve with your favorite sides.
