Unfortunately i have a glass top stove. So I don’t want to have to take all the ingredients out of a separate pan to put them in an enameled cast iron. Any suggestions?
😇 In a pan over the stove, on high heat, add 1/4 c olive oil and thyme. Add 1 can tomatoes and cook till a thickness forms from steaming. Remove tomatoes. Add onions, celery, carrots and roast on high heat for charcoal colors and flavor. Add 1/2 cup red wine to deglaze. Add cooked tomatoes, 1 cup of beef stock, 1 tsp Worcestershire sauce and cook on medium heat for 5 minutes. On low medium heat, add cuts of beef over the vegetables, cover pan with a lid, and steam for 20 minutes. Serve.
I'm Cuban, Puerto Rican and grew up eating Oxtail. The way we serve it is with white rice and fried plantains. Thanks for the video my Cookin Brother 👍

Oxtail is great for stew! It has a very high gelatin content so it help makes the stew very rich.
