Dammmmm girl! You take some BIG OLE bites! ππ YOU, definetly, ARE a "Foodie"!!!! LOVE IT!! π€π€π€ And Mmmmm que rico! π I make mine similar to that. Definitely rotisserie chicken because it has all the flavor! No way I'm cooking chicken to make any recipe. π ALWAYS use rotisserie or chicken bought at the market deli. πβ€οΈ
I don't use mayo though. I use yogurt and another dressing, it's VEGAN, not that I am. And it's not as heavy as mayo. And I ADD fresh grated ginger, because I am obsessed with ginger, and ADD it to everything; soups, casseroles, scrambled eggs, smoothies, etc. And also use powdered ginger, that really brings out its flavor.
This salad is so versatile. You CAN basically, make it your own, as you say! And add anything else to it. Healthy, easy to make, and lots of fresh veggies! π
