Interesting method, but how do you wash this if it has dirt inside?

I think you need to finish cutting it up before you say you're finished. Those pieces are too big. They need to be bite sized, unless you're putting salad knives at each place when you set the table. My silverware didn't come with salad knives so I serve salad already cut up.

Does cutting your iceberg lettuce with a metal knife turn the edges brown?

It's been so long that I'm not sure where I got it from, but I picked up not to cut, but to tear lettuce for a salad. Cutting is supposed to make lettuce "rust". IDK. I've been cutting it anyway it's a lot easier and faster.
