- 2 cups fresh Fordhook lima beans
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon paprika
- 1 tablespoon lemon juice
- Fresh herbs for garnish (optional)
Instructions
- Thoroughly rinse the Fordhook lima beans to clean them.
- In a large pot, bring water to a rolling boil and cook the lima beans for about 10-15 minutes until tender.
- Heat olive oil in a skillet over medium heat, then sauté the chopped onions and minced garlic until fragrant.
- Add the drained lima beans to the skillet, season with salt, black pepper, and paprika, and stir for about 5 minutes. Finish with a squeeze of lemon juice.
Notes
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
- You can freeze cooked lima beans for longer preservation.
- Serve warm, garnished with fresh herbs.
