- 1 pound beef stew meat, cubed
- 1 can kidney beans, drained
- 1 can corn kernels
- 1 can diced tomatoes
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- In a large pot, brown the beef cubes over medium heat until browned on all sides.
- Add chopped onion and garlic; cook until fragrant.
- Stir in smoked paprika and chili powder, cook for 1 minute.
- Add beef broth, tomatoes, kidney beans, and corn to the pot.
- Bring to a boil, then reduce heat and simmer for 45 minutes or until thickened.
- Season with salt and pepper to taste. Serve hot.

- You can add chopped bell peppers for extra flavor.
- For a thicker stew, simmer uncovered longer.
