- 4 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup spinach, fresh
- 1 cup bell pepper, diced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1/2 cup Parmesan cheese, grated
- Fresh basil for garnish
Instructions
- Begin by boiling a large pot of salted water over high heat. Add the northern style pasta and cook according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Then add the diced bell pepper and cook until softened. Toss in the cherry tomatoes and spinach and cook until the spinach wilts.
- Return the drained northern style pasta to the skillet with the sautéed vegetable mixture. Sprinkle in Italian seasoning, salt, and pepper. Toss everything together gently until thoroughly mixed and heated. Top with grated Parmesan cheese.
