Ingredients

  • 1 lb smoked kielbasa, sliced
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 3 garlic cloves, minced
  • 6 cups chicken broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the sliced kielbasa until browned. Remove and set aside.
  2. In the same pot, add chopped onion, carrots, and celery. Sauté until vegetables are tender.
  3. Add minced garlic and cook for 1 minute.
  4. Pour in chicken broth, diced tomatoes, smoked paprika, and thyme. Bring to a boil.
  5. Reduce heat, add browned kielbasa back to the pot, and simmer for 20 minutes to meld flavors.
  6. Season with salt and pepper to taste. Serve hot.
