Ingredients

- 1 lb smoked kielbasa, sliced
- 1 onion, chopped
- 3 carrots, sliced
- 3 celery stalks, sliced
- 3 garlic cloves, minced
- 6 cups chicken broth
- 1 can diced tomatoes (14.5 oz)
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- In a large pot, sauté the sliced kielbasa until browned. Remove and set aside.
- In the same pot, add chopped onion, carrots, and celery. Sauté until vegetables are tender.
- Add minced garlic and cook for 1 minute.
- Pour in chicken broth, diced tomatoes, smoked paprika, and thyme. Bring to a boil.
- Reduce heat, add browned kielbasa back to the pot, and simmer for 20 minutes to meld flavors.
- Season with salt and pepper to taste. Serve hot.
Notes
- Feel free to add potatoes or kale for extra heartiness.
