- 1 lb (450 g) ground beef
- 2 medium zucchinis, sliced
- 2 medium sweet potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, chopped (optional)
- 2 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- Fresh parsley or cilantro for garnish
Instructions
- Gather all ingredients: peel and dice sweet potatoes, slice zucchinis, chop onion and bell pepper, and mince garlic.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add diced sweet potatoes and cook for 8-10 minutes until tender and slightly crispy.
- Push sweet potatoes to one side of the skillet. Add remaining olive oil to the other side, then add ground beef. Cook for 5-7 minutes until browned, breaking it apart as it cooks.
- Add chopped onion, bell pepper, and minced garlic to the skillet. Sauté for 3-4 minutes until fragrant and soft.
- Mix in the cooked sweet potatoes, beef, and vegetables. Season with paprika, cumin, salt, and pepper. Continue cooking for 5 minutes to blend flavors.
- Garnish with fresh parsley or cilantro before serving.
