  • 2 medium zucchinis, sliced
  • 2 medium sweet potatoes, diced

  • 1 tsp paprika
  • 1/2 tsp cumin

Instructions

  1. Gather all ingredients: peel and dice sweet potatoes, slice zucchinis, chop onion and bell pepper, and mince garlic.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add diced sweet potatoes and cook for 8-10 minutes until tender and slightly crispy.
  3. Push sweet potatoes to one side of the skillet. Add remaining olive oil to the other side, then add ground beef. Cook for 5-7 minutes until browned, breaking it apart as it cooks.
  4. Add chopped onion, bell pepper, and minced garlic to the skillet. Sauté for 3-4 minutes until fragrant and soft.
  5. Mix in the cooked sweet potatoes, beef, and vegetables. Season with paprika, cumin, salt, and pepper. Continue cooking for 5 minutes to blend flavors.
