Instructions
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes, season with salt and pepper, and cook until golden brown and tender, about 10-12 minutes. Stir occasionally to prevent sticking and ensure even cooking.
- While the potatoes are cooking, in a separate pan, brown the ground beef over medium-high heat. Break it apart with a spatula and cook until fully browned, about 7-8 minutes. Drain excess fat, then add the taco seasoning and a splash of water, stirring well to coat the beef evenly. Let it simmer for 5 minutes to absorb flavors.
- Once both the beef and potatoes are cooked, combine them in the skillet and heat through for a couple of minutes. Divide the mixture into bowls and top with shredded cheese, diced tomatoes, red onion, and chopped cilantro. Add optional toppings like sour cream or jalapeños for extra flavor.
