Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 2 large onions, thinly sliced
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup shredded Gruyère or Swiss cheese
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- 1/2 cup chicken broth
- Fresh thyme or parsley for garnish (optional)
Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced onions and a pinch of salt, cooking slowly for about 20-25 minutes until they are deep golden and caramelized. Stir occasionally to prevent burning. Add minced garlic during the last 2 minutes of cooking.
- Preheat your oven to 375°F (190°C). Season the chicken breasts generously with salt, pepper, and dried thyme. Place them in a greased baking dish.
- Spread the caramelized onions evenly over the chicken breasts. Pour chicken broth into the baking dish to keep the chicken moist. Top each chicken breast with shredded cheese.
- Place the baking dish in the oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C). For a bubbly, golden top, broil for an additional 2-3 minutes.
Notes
- Use high-quality cheese for a rich, melty topping.
- Caramelize the onions slowly for maximum sweetness and flavor.
- Feel free to add herbs like rosemary or thyme for extra herbaceous notes.
