- 1 cup cooked corn kernels or grilled corn slices
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 2 tbsp lime juice
- 1/2 cup crumbled cotija cheese or feta
- 1/4 cup chopped fresh cilantro
- 1 tsp smoked paprika
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions, then drain and rinse with cold water.
- In a large bowl, mix mayonnaise, sour cream, lime juice, smoked paprika, salt, and pepper.
- Add cooked pasta, corn kernels, cheese, and cilantro to the bowl.
- Toss everything until evenly coated.
- Serve immediately or chill before serving for a cooler, more developed flavor.

- You can substitute grilled fresh corn for cooked frozen corn.
