Instructions
- Preheat oven to 400°F (200°C). Toss carrots with olive oil, salt, and pepper and roast for 25-30 minutes until tender.
- In a bowl, combine roasted carrots, garlic, and honey. Mash with a fork or potato masher until desired consistency.
- Garnish with fresh herbs and serve warm as a healthy side.
