Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté diced onion and minced garlic until translucent and fragrant.
- Add the drained white beans, vegetable broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 15-20 minutes.
- Use an immersion blender to partially blend the soup for a creamy texture if desired.
- Serve hot, garnished with chopped parsley.

- You can add chopped kale or spinach for extra greens.
