- 1 cup (120g) of cottage cheese
- 1/2 cup (50g) of unsweetened cocoa powder
- 1/2 cup (120ml) of almond milk or any preferred milk
- 1/4 cup (40g) of honey or maple syrup
- 2 large eggs
- 1 scoop of vanilla protein powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- Optional: dark chocolate chips or chopped nuts for added texture
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with silicone liners or lightly grease it with non-stick spray to prevent sticking.
- In a blender or food processor, blend the cottage cheese, almond milk, honey, eggs, and vanilla extract until smooth and creamy.
- Pour the blended mixture into a mixing bowl. Add the cocoa powder, protein powder, and salt. Stir until thoroughly combined. Fold in optional chocolate chips or nuts if desired.
- Divide the batter evenly among the muffin cups, filling each about 3/4 full.
- Bake in the preheated oven for 15-18 minutes. The edges should be set, and a toothpick inserted in the center should come out with a few moist crumbs. Allow the bites to cool in the tin for 10 minutes before transferring to a wire rack.
