Ingredients

  • 1 cup (120g) of cottage cheese
  • 1/2 cup (50g) of unsweetened cocoa powder
  • 1/2 cup (120ml) of almond milk or any preferred milk
  • 1/4 cup (40g) of honey or maple syrup
  • 2 large eggs
  • 1 scoop of vanilla protein powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Optional: dark chocolate chips or chopped nuts for added texture

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with silicone liners or lightly grease it with non-stick spray to prevent sticking.
  2. In a blender or food processor, blend the cottage cheese, almond milk, honey, eggs, and vanilla extract until smooth and creamy.
  3. Pour the blended mixture into a mixing bowl. Add the cocoa powder, protein powder, and salt. Stir until thoroughly combined. Fold in optional chocolate chips or nuts if desired.
  4. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  5. Bake in the preheated oven for 15-18 minutes. The edges should be set, and a toothpick inserted in the center should come out with a few moist crumbs. Allow the bites to cool in the tin for 10 minutes before transferring to a wire rack.
