- 1 packet taco seasoning mix
- 1 cup chicken broth
- 8 small flour or corn tortillas
- 1 cup diced tomatoes
- 1 cup shredded lettuce
- 1 ripe avocado, sliced
- ½ cup shredded cheese (cheddar or Monterey Jack)
- Fresh cilantro, chopped (optional)
- Lime wedges for serving
Instructions
- Place chicken breasts in the crockpot, sprinkle with taco seasoning, and pour the chicken broth over. Cover and cook on low for 6 hours or until chicken is cooked through.
- Shred the cooked chicken using two forks and mix with the juices in the crockpot.
- Warm the tortillas in a skillet or microwave.
- Assemble tacos by placing shredded chicken in each tortilla and topping with diced tomatoes, lettuce, cheese, avocado slices, and cilantro.
- Squeeze lime juice over the tacos before serving. Enjoy!
